BBQ Wild Boar Ribs with Bourbon Glaze

Ingredients

  • 2 racks wild boar ribs (3-4 lbs each)
  • 1/4 cup brown sugar
  • 2 tablespoons paprika
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 tablespoon black pepper
  • 1 cup BBQ sauce
  • 1/4 cup bourbon
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons honey

    Remove membrane from back of ribs. Mix brown sugar, paprika, garlic powder, onion powder, and pepper.

    Rub spice mixture generously over both sides of ribs. Let sit 30 minutes.

    Preheat oven to 275°F. Wrap ribs tightly in aluminum foil and place on baking sheet.

    Bake for 2 1/2 hours until meat is tender and pulling away from bones.

    Make glaze: Combine BBQ sauce, bourbon, vinegar, and honey in saucepan. Simmer 10 minutes.

    Unwrap ribs, brush with glaze. Finish on hot grill or under broiler for 5 minutes per side until caramelized.

    Brush with more glaze, let rest 5 minutes, then cut between bones and serve.
